THIS VEGAN CARROT CAKE IS JUST AS DECADENT BUT NOT AS SINFUL AS THE TRADITIONAL DESSERT. HERE’S HOW TO MAKE IT AT HOME!

START WITH YOUR DRY INGREDIENTS. YOU’LL NEED ALL-PURPOSE FLOUR, BAKING SODA, SALT, AND CINNAMON. WHISK THEM TOGETHER IN A BOWL TO COMBINE.

BEGIN YOUR WET INGREDIENTS WITH POWDERED EGG REPLACER, AND ADD WATER, AS WELL AS ORANGE JUICE.

THIS CAKE NEEDS SWEETNESS AND RICHNESS, SO ADD TURBINADO SUGAR AND MELTED SOY BUTTER. THEN, GET IN THERE WITH YOUR HANDS AND START MIXING.

SOY BUTTER HELPS KEEP THIS RECIPE 100% VEGAN, BUT YOU CAN USE TRADITIONAL BUTTER IF YOU’D LIKE.

ADD YOUR WET INGREDIENTS TO THE DRY, AND KEEP MIXING WITH YOUR HANDS UNTIL A SMOOTH BATTER COMES TOGETHER.

THEN, ADD SHREDDED CARROTS, WALNUTS, AND RAISINS AND MIX. THESE WILL GIVE THE CAKE GREAT TEXTURE AND HELP IT BIND WHILE IT BAKES.

PLACE YOUR BATTER INTO GREASED CAKE PANS, AND BAKE FOR 20-30 MINUTES AT 350 DEGREES.

WE MADE A VEGAN CREAM CHEESE FROSTING FOR THIS CAKE, WHICH IS MADE FROM: POWDERED SUGAR, VEGAN CREAM CHEESE, SOY BUTTER, AND FLOUR.

IT IS THEN FLAVORED WITH VANILLA AND APPLE CIDER VINEGAR, AND FROSTED ON THE CAKE GENEROUSLY!
