World Culinary Arts Scandinavia  
The Culinary Institute of America's "World Culinary Arts Program: Savoring the Best of World Flavors," is a winner of the 2007 and 2009 James Beard Awards for Best Webcast, and is a web-based documentary series. Each year, The Culinary Institute of America produces a new documentary that explores the best in food and cooking around the world with the goal of educating American foodservice professionals and food media. This year, we will be producing a documentary about the cuisine of Scandinavia. Footage will be shot from June 1 - 15 in Sweden and Denmark, with script writing and editing happening between June 16 - July 16.

From Kingston, Jamaica, the largest English-speaking city south of Miami where cool reggae rhythms provide the background music for diners feasting on fiery hot jerked chicken … to San Juan’s elegant dining rooms where the clientele is as sophisticated as any in the world... to Tobago’s beachside food stalls that offer treats that play on the sea’s rich bounty, the Caribbean islands of Jamaica, Puerto Rico, and Trinidad and Tobago offer a complex world of flavors where fine dining can be found side by side with a staggering array of street eats and finger-licking beach treats.

Join us as we visit a region that is as familiar as fried chicken and as exotic as breadfruit and jackfruit, as we shop in markets that seems transplanted from the African continent, sample traditional dishes that were eaten in the region before the arrival of Columbus, and visit fine dining restaurants that equal any in the world.
