Script Details

This will be inserted into a larger training module. This is part of a Q&A session at the end of one of the segments. 
Jennifer: Our deli is so busy around lunch time and it becomes a challenge with some associates to wash their hands and change gloves. How would you recommend I address this?

Jennifer: I now really understand why temperature control is so important. The temperature logs that we maintain in the deli for our hot food program really are critical as they verify we are cooking, holding and reheating foods safely for our customers.

Lisa: What temperature should rotisserie chickens be cooked to?

Jennifer: 180 degrees F

Jennifer: Another key take away for me is how important it is to change gloves when changing tasks and food commodities I am working with. Allergens can also be transferred from one food to another if I don’t change gloves.

Jennifer: There is so much debris that can accumulate on the slicers in a short period of time. It is really important to stay on top of cleaning the slicers.
