While it sounds simple, scooping truly is one of the most important parts of our business. You eat with your eyes first, and proper scooping is essential to the presentation of our products. MMM... Now those look good!
You’ll need a #30 scoop, a scale for measuring ounces, a cone or dish, and of course, custard.
Start by calibrating the scale.
Place the cone or cup on the scale and re-calibrate the scale to read zero.
And now it’s time to scoop. See? I told you there is a lot to it.
We’ll start with cones so get those gloves on! Okay, grab the scoop and get ready to practice your skim. This pulling motion is a skim.
Let’s see that again.
Once you’ve skimmed, it’s time for what we call the cradle. Let’s see that again. Repeat until you have a small mound of custard cradled in the scooping tin.
Next, dig just below that small mound of custard with your scoop - but don’t touch the custard with your hands!
Now lift the scoop straight up and out of the tin. Be careful not to drag it up the side of the tin. Flat scoops are bad scoops. Nobody likes a bad scoop.
